Osborne Clarke supports the European expansion of London's healthy dining phenomenon, The Salad Project

Osborne Clarke has assisted The Salad Project in negotiating the commercial lease for its first Parisian restaurant, which is set to open in September 2026 in the Sentier district at 107 Rue Réaumur, in Paris' 2nd arrondissement.

The 200 m² premises have been designed as a vibrant hub, with the aim of catering not only for everyday lunches but also for working, socialising or taking a break. The establishment aims to become a rallying point for the neighbourhood's creative, entrepreneurial and sporting communities — in line with the positioning developed by the brand in London, notably with the opening of its first "neighbourhood store" in Notting Hill: warm, welcoming and conceived for longer visits, featuring natural materials, soft finishes and a refined colour palette that together create a local and familiar atmosphere, whilst maintaining the efficient service that characterises the brand.

Negotiations are already under way for further locations in Paris, reflecting the strength of The Salad Project's ambitions.

A Concept That Has Taken London by Storm

The Salad Project was founded by Florian de Chezelles and James Dare — both graduates of the Lausanne Hotel School — who opened the doors of their first restaurant in the summer of 2021 with a straightforward mission: to create the salad bar they had always dreamed of finding. The brand has been built around a considered approach to eating well — thoughtful ingredient pairings, high-quality produce and the freedom to personalise one's order — offering a fresh and mindful way to live, feel well and eat.
As early as 2022, The Salad Project was named Uber Eats Restaurant of the Year in the United Kingdom, from a field of over 22,000 establishments, cementing a model built on quality, consistency and strong customer demand. The Times described The Salad Project as "the most coveted lunch of the moment", drawing daily queues at its London outlets. The Daily Mail likewise noted that the brand "is taking the British capital by storm, with queues of up to half an hour".

The Salad Project now has 15 locations in London and plans to continue expanding in the British capital.

A Distinguished Investor Base: Deliveroo's Co-Founder and Soho House's CEO Among Shareholders

The Salad Project is backed by Will Shu, CEO and co-founder of Deliveroo, who sits on the brand's board of directors. Nick Jones, CEO and founder of the Soho House group, is likewise a member of the board.

Bold European Ambitions

This inaugural opening outside the United Kingdom marks the beginning of The Salad Project's European expansion, with Paris as its first port of call.
